Choco-Lucuma Cake

I've always wanted to mix Cacao and Lucuma in a cake, I've done it in smoothies and raw chocolates but never baked. I was more than pleased with the results!

INGREDIENTS

THE CAKE:

  • 2 Cups Almond Mylk
  • 2 Cup Whole Spelt Flour (Whole Wheat if you prefer)
  • 1 Cup Lucuma FLour
  • 2 Tsp Apple Cider Vinegar
  • 1 Cup Coconut Oil (melted)
  • 2 Tsp Vanilla Powder or Extract
  • 1 Cup Organic Cacao Powder
  • 2 Tsp Baking Soda
  • 1/2 Cup Carob Syrup
  • 1/4 Tsp Stevia Powder
  • 1/4 Tsp Sea or Himalayan Salt

THE FROSTING:

  • 1 Cup Coconut Oil (melted)
  • 2 Tbsp Organic Cacao Powder
  • 1 Tsp Vanilla Powder or Extract
  • 1 Tbsp Raw Honey
  • Pinch of Salt

    HOW WE DO IT...

    Preheat the oven at 350℃

    Blend all the ingredients on a Blender (Pour liquids first)

    Bake for 30 minutes
