Lemon Macaroons

The No. 1 question that follows a Nut Mylks demo during my workshops is "What do I do with the left overs? You can mix the nut or seed "meal" and make both savoury and sweet treats and raw vegetable spreads. 

INGREDIENTS

  • 1 Cup Nut Mylk meal (what is left after you put your mylk through a strainer or nutmylk bag)

  • 2 Tbsp Dried Coconut (unsweetened)

  • 2 Tbsp Raw Honey or Yacón Syrup (1/4 Tsp. Stevia if you are avoiding all sugars)

  • Juice of 1 Lime

  • Peel of 1 Lime

  • 1/4 Tsp Ginger Powder

  • 1/4 Tsp Turmeric

HOW WE DO IT...

Mix all the ingredients in a food processor.

Make bite sized balls.

Keep refrigerated.
