Have to say, traffic isn't so bad when your 7 year old yells "Mami, blackberries on the side of the road, let's get some!!!" I put the groceries on hold and we got out of the car and gathered about 1 Kg. of wild blackberries, enough to freeze some for later in the year.
- 2 Cups Almond Mylk (or any Nut Mylk preference)
- 2 Tsp Chia Seeds
- Juice from 1/2 a Lime
- 1 Tsp Coconut Oil (melted)
- 1 Cup Blackberries (or any Berry variety)
- 1 Tbsp Tahini
- 1/4 Tsp Stevia Powder
- Pinch of Salt
Soak the Chia Seeds in the Almond Mylk for 1 hour. Mix with the rest of the ingredients by hand of in a blender for a few seconds, let it sit in the fridge for a while (we want all those flavours well integrated) and enjoy every bite! And like most mixtures, it will taste even better the next day.
