Have to say, traffic isn't so bad when your 7 year old yells "Mami, blackberries on the side of the road, let's get some!!!" I put the groceries on hold and we got out of the car and gathered about 1 Kg. of wild blackberries, enough to freeze some for later in the year.

INGREDIENTS

  • 2 Cups Almond Mylk (or any Nut Mylk preference)
  • 2 Tsp Chia Seeds
  • Juice from 1/2 a Lime
  • 1 Tsp Coconut Oil (melted)
  • 1 Cup Blackberries (or any Berry variety)
  • 1 Tbsp Tahini
  • 1/4 Tsp Stevia Powder
  • Pinch of Salt

Soak the Chia Seeds in the Almond Mylk for 1 hour. Mix with the rest of the ingredients by hand of in a blender for a few seconds, let it sit in the fridge for a while (we want all those flavours well integrated) and enjoy every bite! And like most mixtures, it will taste even better the next day.

Love the mix of textures and colours!
